I hope you all had a wonderful weekend and for those of you OFF from work tomorrow, that it will continue!
Here’s my weekend (with photos)… let’s just say POOR Michael will NOT be losing any weight during this time… HA HA
Friday night enjoyed Happy Hour with Tanya (glad to be the designated driver for a good friend) and she needed to also get out of the house (following some oral surgery).
Saturday morning was a quick trip to grocery store to get the items needed for Valentine’s Day ‘meals’. Michael and I went for a walk in the rain and afterwards I started the PREP for the meals…
This is for the homemade cinnamon rolls with pecans… Cooking Light recipe (similar one but mine is an old cookbook (not sure how light this really is) and we WILL say, they tasted amazing similar to Cinnabon’s!
Ethan asked for MY enchilada’s – he and Michael love them. VERY simple recipe: warm (or soften in oil). Filling is black beans, low fat cream cheese, can of chicken and enchilada sauce (medium spice). After tortilla’s soft, add fillings and roll in a greased (cooking spray) pan add any leftover filling to the top, followed by some more of the enchilada sauce and then sprinkle with Mexican cheese and cover with foil – bake at 350 degrees for about 30 minutes – last 5 minutes remove the foil until cheese topping melted. We serve with guacamole (when I’ve gone to Pike Place – hee hee)… had to serve on my FAT plates…
Sunday morning… baked, powder sugar iced (with a touch of fresh lemon juice) and YUMMY – both the boys (as well as Ethan’s cousin) said they tasted like Cinnabon’s! I even shared with my neighbors (again – like I did the cake last time).
Michael and I DEFINITELY needed ANOTHER walk after breakfast – glad I only had one of those yummy’s. I made the boys some grilled cheese & ham sandwiches, took a shower and then needed a little nap (didn’t sleep so well – trying to keep from getting sinus migraines lately). A few more chores and then started our dinner. I made Half Baked Harvest’s – One Pan Baked Champagne Cream Sauce with Truffle Oil recipe (LOVE their blog post too, very cute!) – WE added Grilled Chicken Breast. It turned out AMAZING as well and Michael (and Ethan) told me to keep this recipe and make again!
